Chef Enrique Olvera is the mastermind behind the highbrow Mexican restaurant, which he opened in late 2014 following the success of his white-hot dining destination in Mexico City, Pujol (ranked #3 among Latin America’s 50 Best Restaurants in 2014 according to Restaurant Magazine). Olvera hired chef Daniela Soto-Innes to assist him with the task of growing and maintaining a demand for upscale Mexican cuisine in NYC. Fun side note: Soto-Innes actually got her start by lying about her age. She started working as a chef at the age of 14 and was brought on to help open Cosme at the age of 23 (now with nine years’ experience under her belt).
