Blanca, the fashionable Bushwick tasting room that opened on the grounds of Roberta’s in Brooklyn, is the brainchild of the formerly anonymous chef Carlo Mirarchi, who, along with two partners, has turned Roberta’s from a ramshackle neighborhood pizza hall into a poster child for the great Brooklyn culinary miracle. Dining at Blanca is by reservation only and it only accepts parties of up to four people. The price is $195 per person and does not include tax, gratuity, or wine, and a wine pairing is available for $95 per person. Reservations are available 30 days before the date of the reservation at 11am. They do not allow cell phones or photographs during meals, all the better to savor the quality seasonal offerings of Chef Mirarchi in peace.
